My sister sent this recipe from Texas and she says it is hot enough to blow the doors off the horse barn. Definitely hot enough to make my eyes water and my nose run, but just the right combination of heat and flavors for the Superbowl crowd. She got second place in a chili cook-off with one can of beans, but we added the second because of the east coast taste buds.

She buys the dried habanero spices in Texas, where five-alarm chili is the norm, so be very careful with this one. Because of the dried spices, it gets hotter the second day and you’ll need the fire department on the third. It smells great when it’s simmering, so we cook it the night before or the day of the big game. Make ahead at your own risk.

 

Kerrian's Easy Superbowl Chili

Ingredients
  

  • 3 pounds ground sirloin
  • 1/2 teaspoon sea salt
  • 4 heaping teaspoons minced garlic
  • 2 15 oz cans stewed or diced tomatoes with onions, celery and green peppers
  • 2 15 oz cans Goya black beans, pureed
  • 1/2 cup sausage, chopped and thoroughly browned
  • 3 more teaspoons sea salt
  • 4 teaspoons chili powder (hot Mexican style)
  • 4 teaspoons onion powder
  • 1/4 cup light brown sugar
  • 1/2 teaspoon dried habanero seasoning (optional)

Instructions
 

  • Get out your chili/spaghetti pot.  Sprinkle ½ teaspoon sea salt evenly in bottom of pot.
  • Turn on medium heat. Add ground sirloin a little at a time and brown evenly, stirring to break up clumps. Drain off the fat.
  • Add the garlic and tomatoes and stir.
  • Puree the black beans, add to the pot and stir.
  • Cook sausage in a separate pan, drain and add to the chili pot and let simmer for 15 minutes on low. Stir.
  • Add the rest of the salt, the chili powder, the onion powder, and the brown sugar, stir and let simmer for about an hour.
  • Add the habanero seasoning and stir. Let simmer for another 30 minutes.
  • Serve with your favorite toppings. 
  • Make sure sour cream is available to cut the heat and enjoy!

KNR, p. 18 “The Giants are going to the Superbowl!”

(First posted in 2012, when the Giants really were on their way to the Superbowl. Alas, in 2013 and 2014, they did not even make the playoffs. The recipe still works, tho.  🙂  🙂

I don’t like to brag, but my team is going to the SUPERBOWL! And with a heart attack OT win! We expected a great game, but this was outstanding!

 

Sheila wasn’t all that happy about the Giants getting this far, but our fan rivalry is (mostly) good-natured and she took the ribbing pretty well.  At least she didn’t boo or wear her (purposely anonymous here) team’s colors during the game.

 

People descended on the house an hour before the playoff game against the 49ers, ready to eat. The guys from Homicide brought cheese steaks, Sheila put together subs, and I made our famous football soup. This one is a surprise favorite with our crowd, just right for the people who can’t handle my four-alarm chili and can be fixed from scratch to bowl in the time it takes to cook the rice.

 

 

Hearty Vegetable Soup

Ingredients
  • 32 oz. box Swanson’s no msg chicken broth
  • ¼ cup uncooked Basmati rice
  • 1 19 oz. can Progresso minestrone
  • 1 15 oz. can Progresso black beans
  • 1 15 oz. can petite cut diced tomatoes (with jalapenos if you can handle the kick)
  • 1 15 oz. can mixed veggies
  • Grated parmesan cheese
Instructions
  1. Pour the chicken broth into a large pot. Add the rice. Cover and cook on medium-high until boiling, about 10 minutes.
  2. Add the minestrone, black beans, diced tomatoes and mixed veggies and return to boil. Stir frequently until the rice is tender, about 20 minutes.
  3. Remove from heat and let ‘rest’ for 20 minutes before serving. The flavors will deepen for a more savory taste.
  4. Ladle into bowls, sprinkle parmesan cheese on top, and enjoy!

 

Like the vegetable combination, but want to make it into a meal all on its own? Add meatballs. Now that’s a hearty soup.  🙂
