We had a bumper crop of tomatoes in July. We gave away a couple of bushels to the neighbors, but they stopped answering their doorbells. We were getting buried under Beefsteaks, so the mailman got a bag or two. Ditto the guys down at the precinct.

Sheila canned, sliced, stewed, and diced tomatoes for weeks. We were running out of ways to serve up the big guys and still they kept popping off the vines. That is, up until my buddy across the street harvested his zucchini. We traded zucchini for tomatoes and gave him Sheila’s recipe for Summer Quiche. Great deal! She made a dozen pies and froze them for later. I used to be a meat and potatoes guy, but after Jamaica, I’ll eat almost anything. And, to my surprise, nobody ever died from eating quiche. Or a salad.

Summer Quiche

Ingredients
  

  • 1 9" Deep-dish pie shell
  • 1 stick margarine
  • 1 Tablespoon onion powder
  • 4 cups thinly sliced zucchini (chopped broccoli crowns also work well)
  • 1 Tablespoon dried parsley
  • 1/2 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sea salt (or to taste)
  • 2 jumbo eggs, beaten
  • 1 1/4 cups low skim, shredded mozzarella
  • 1 3/4 cups shredded cheddar
  • 2 ripe, sliced medium tomatoes

Instructions
 

  • Pre-bake deep-dish pie shell for 6-8 minutes in 350 oven. Remove.
  • Melt margarine in large non-stick frying pan. Add onion powder and zucchini, sauté 10 minutes, stirring until zucchini is heated through.
  • Add parsley, oregano, and basil, stir briefly. Add garlic powder and salt to taste. Saute briefly, take off heat.
  • In medium bowl, mix eggs, mozzarella and sharp cheddar.
  • Add to mixture in pan, heat for 5 minutes on low heat, stirring until well blended.
  • Pour into deep-dish pie shell. Arrange tomato slices on top.
  • Bake 30-40 minutes at 350 until firm in center and cheese is light golden brown on top.
  • Let cool for 10 minutes, then slice and serve with salad.

KNR, p. 332 “Mango Smoothies”

A mango is a delicious summer fruit that can be found fresh in the stores now, or in the freezer section all year round. We sometimes eat ripe mangos, chins dripping with juice. But, this season of stifling weather compels us to drink vitamin filled fruit smoothies to help us with hydration.

Here are two mango smoothie variations: Mango Watermelon Smoothie (pictured above) and Four Fruit Mango Smoothie, a blend of mangos, blueberries, dark cherries, and pear juice that results in a WOW purple beverage. Easy, yummy, satisfyingly thirst quenching.

 

Mango Watermelon Smoothie

  • 1 Blender

Ingredients
  

  • 1 cup chopped mango, fresh or frozen
  • 1 cup 1 cup chopped watermelon
  • 1/2 teaspoon sea salt
  • 3/4 cup pear juice

Instructions
 

  • Roughly cut mango and watermelon into one inch chunks and place in a blender.
  • Add sea salt and pear juice.
  • Blend until mushy, about 2-3 minutes.
  • Drink right away or chill in fridge for later.

Four Fruit Mango Smoothie

  • 1 Blender

Ingredients
  

  • 1 cup chopped mango, fresh or frozen
  • 1/2 cup blueberries, fresh or frozen
  • 1/2 cup dark sweet cherries, fresh or frozen
  • 1/2 teaspoon sea salt
  • 1 teaspoon light brown sugar
  • 3/4 cup pear juice

Instructions
 

  • Roughly cut mango into one inch chunks and place in blender.
  • Add the rest of the ingredients and blend until smooth, about 3-4 minutes.
  • Drink right away or chill in fridge to drink later in the day.

Notes

The Four Fruit Mango Smoothie is very thick and it might be necessary to stop the blender and stir the mix after each minute.

KNR, p. 327 “Mocha for the Holidays”

“Mocha” refers to a coffee drink that combines strong coffee (or espresso) with chocolate, and milk. The chocolate is added in the form of powder, chocolate syrup, or melted chocolate. 

Sheila and I both love coffee and if you have seen our recipe list, you know that we enjoy chocolate quite a bit as well. It didn’t occur to us to put the two together until we were stuck with terrible coffee at a motel. In a life-changing happenstance, a server placed packets of hot chocolate powder near the hot water and a light flashed on in my brain. I dumped the mix into a paper cup of the muddy water they had labeled as coffee, and we now had something drinkable…dare I say ‘transformative?’

We were hooked by the flavor combo, so why not make mocha at home using the delicious coffee we love?

The balance of ingredients is fairly standard:

Mocha for the Holidays

Equipment

  • 1 quart-sized pan

Ingredients
  

  • 6 ounces strong, hot coffee (or espresso)
  • 1/2 cup hot (not boiling) whole milk
  • 2 Tablespoons Ghirardelli chocolate chips or chocolate syrup

Optional: candy canes, cinnamon sticks, whipped cream, sugar, mini-morsels, Bailey's

Instructions
 

  • Brew your favorite coffee as you usually do.
  • Place the whole milk in a pan on the stove, add the chocolate, and whisk together.
  • Heat on medium high and continue to whisk until the milk starts to simmer around the edges (do not boil) and the chocolate is thoroughly melted.
  • Pour the heated milk/chocolate into the coffee, stir and serve. You have an easy, yummy hot drink in a few minutes.

Notes

At the holidays, we serve the mocha drinks with whipped cream on top, and/or plop a cinnamon stick into the mug. The photo shows the variations of the basic recipe, with ground cinnamon, frothy milk, or chocolate powder on top for enhanced flavor.
These days, we travel with hot chocolate packets which mix nicely with a 6-8 ounce mug of coffee. The chocolate covers a lot of nasty notes of suspicious brown liquid presented as coffee.
